After I started to eat less gluten, my wonder to make gluten-free meals has also become my new hobby. I love to create the healty and gluten-free version of the most loved foods. Today’s choice is Taco.

No flour, Yes gluten-free. Yeah we’ll use my favorite veggie ‘cauliflower’ before its season ending.

Let’s get started!


Tortillas Ingredients

  • 1 head of cauliflower
  • 2 eggs
  • 1/4 tsp sea salt
  • 1/8 tsp ground black pepper
  • 1 tsp lemon zest

Filling Ingredients

  • 250 gr ground beef (%80 lean)
  • 1 onion
  • 1/4 tsp sea salt
  • 1/8 tsp ground black pepper
  • 1/4 tsp chili pepper (optional)
  • 1/4 tsp #naturelka garlic powder
  • 8 brussels
  • 1/4 tsp turmeric
  • 1 tbsp olive oil
  • 1/4 tsp ground black pepper



  1. Preheat oven to 220°C
  2. Using a food processor, pulse the cauliflower until you get a texture similar to rice.
  3. Lay out the “rice” evenly on a rimmed baking sheet and place into the oven. Roast for 20-25 minutes, tossing every so often, until cauliflower is tender. Remove from oven and allow to cool.
  4. Reduce oven to 190°C
  5. Place the tender cauliflower in cheesecloth and squeeze out as much excess water as you can.
  6. After squeezing cauliflower, add it into a bowl with all other ingredients.
  7. Make 6-7 balls of equal size, and spread each ball out on baking sheets to make 6-7 small tortilla-sized circles.
  8. Bake for 8 to 10 minutes, then flip, and cook for an additional 5-7 minutes, then your tortillas ready.

Ground Meat

  1. Grill chopped onion with taco seasonings (sea salt, black pepper, chili pepper, garlic powder) in the skillet.
  2. Allow to simmer for 3 minutes. Then add ground meat and simmer more 5 minutes.
  3. Add to tacos shells.

Grilled Brussels

  1. Chop brussels into 4 small pieces.
  2. Grill them with olive oil and seasonings in other skillet for 5-8 minutes. And add them to taco shells above ground meat.
  3. Share your tacos with your loved ones;) Bon Appetit!
